Matar Kachori /Green Peas Kachori Recipe:
Ingredients for 10-12 Kachoris:
1 tsp Cumins Seeds/Jeera
1 tsp Fennel Seeds Powder/Saunf Powder
1/2 Turmeric Powder
1 tbsp Red Chili Powder
1 tsp Garam Masala
1 tbsp Coriander Powder
1 tsp Amchur Powder
1 tsp Sugar
1 Cup Fresh matar
1 Small Size Chopped Onion
2 tbsp Gram Flour/Besan
2-3 Chopped Green Chilies
1 tsp Grated Ginger
Chopped Coriander Leaves
1 +1/2 Cup Maida
1 tsp Carom Seeds/Ajwain
Salt to Taste
Oil for Frying
Water as Required
Method:
For Dough:
1. In a big bowl take maida, salt, carom seeds and 2 tbsp oil
2. Mix it well and add water in intervals
3. knead it well to a soft dough
4. dough is ready. cover with wet napkin and keep aside 15-20 minutes
For Matar Mixture:
5. turn on flame and heat 1/2 tbsp oil in a pan
6. add rinse fresh matar and roast it well 3-5 mins on low flame and take it out in a plate
7. again heat 2 tbsp oil in a same pan
8. add cumin seeds, chopped onion and stir it till onion gets color change
9. add green chili, grated ginger and stir it well for 2 minutes on low flame
10. mash the matar with masher coarsely
11. add turmeric powder, red chili powder, coriander powder, garam masala, amchur powder, fennel seed powder and mix it well
12. add besan and stir it for 2-3 minutes continuously
13. now add mashed matar and mix it well
14. add salt to taste and sugar. mix it well
15. add chopped coriander leaves and stir it well on low flame for 1 minute. turn off flame
16. transfer this mixture in a bowl and let it cool down completely
17. when cooled the mixture. heat the oil in kadai
18. start to make balls from dough
19. roll into a small circles on rolling board
20. place the matar mixture on the puri. gather the edges together in the cnter, join and remove the extra dough and flatten them on the palm of hand
21. make rest of kachoris one by one
22. place the kachori in medium hot oil for deep frying
23. when the kachori puff up then flip them
24. fry the kachoris on low-medium flame till both sides are crisp and light brown color
25. remove kachoris on paper towel
26. fry rest of kachoris with same method
27. Serve hot Kachoris with Chutneys
