Gujiya Recipe - How to Make Karanji
INGREDIENTS:
FOR THE DOUGH:
250 grms All Purpose Flour/Maida
2-3 tbsp Pure Ghee/Clarified Butter/Sajuk Tup
Salt To Taste
Water As Required(1/2 Cup Water)
FOR THE STUFFING:
250 grms Khoya/Mava
125 grms Desiccated Coconut
150 grms Powdered Sugar
Dry Fruits(Almonds,Cashews and Pistachios)Raisins/Kishmish
1 tbsp Charoli Seeds
1 tsp Cardamom Powder/Elaichi Powder
Pinch Of Nutmeg Powder/Jaifal Powder
Oil OR Ghee For Frying Gujiya
METHOD:
1.For making dough,take all purpose flour,2-3 tbsp ghee and salt to taste in a big bowl
2.Mix it well with your fingertips
3.Add water in parts and knead it well
4.Dough is ready and cover it with a plate. Keep it aside for 30 minutes
For The Stuffing:
1.Add dry fruits in a mixer jar and grind it coarsely. Remove it in a small bowl
2.Turn on Flame and add mawa in a pan. Roast it well and stir continuously on low flame
3.Transfer the roasted mava in a mixing bowl for cooling
4.Roast desiccated coconut in the same pan for 1-2 minutes on low flame
5.Turn off flame
6.When the mavacompletely cool down,add roasted desiccated coconut, powdered sugar,coarsely ground dry fruit spowder,
raisins,charoli,cardamom powder and nutmeg powder in the mava
7.Mix everything well and keep the stuffing aside
FOR GUJIYA :
1.Take small dough and make medium log. Slice it into equal patrs with knife
2.Make balls and transfer them in a plate. Cover with a wet kitchen towel
3.Make rest of the balls with the same method
4.Turn on flame and add oil in a kadai for frying gujiya on low flame
5.Roll the ball with rolling pin to a small circle
6.Make rest of the puris
7.For maida paste,take 1 tbsp maida in a small bowl. Add water and mix it well
8.Take a puri and place 1 tbsp of the mava stuffing on one side of puri and apply maida paste all over the edges of the puri
9.Bring the edges together and join
10.Press the edges and sealed well
11.Make pleated design at the edges Keep on folding and twisting the edges till the end
12.Prepare gujiyas this way and transfer in a plate
13.Place the gujiyas in the heated oil. Fry them on medium flame
14.Turn them carefully. Deep fry till gujiyas becomes golden brown
15.Transfer fried gujiya in a plate
16.Fry rest of the gujiyas this way and transfer in the same plate
17.MAWA GUJIYA are ready to serve
Once MAWA GUJIYAS completely cooled down,store GUJIYAS in an air tight container. TRY it !!!
