Patwadi Recipe - Vidarbha Special Patodi by Gahukar's Kitchen INGREDIENTS: 1 Cup Gram Flour/Besan 1 Finely Chopped Onion Medium Size For Patwadi 1/2 Cup Dry Desiccated Coconut 2 Tbsp Ginger-Garlic Paste 1 Tsp Mustard Seeds/Rai 1 Tsp Cumin Seeds/Jeera 1 Tsp Sesame Seeds/Til 1 Tsp Turmeric Powder 1 Tbsp Red Chili Powder 1 Tbsp Coriander Seeds 1 Tbsp Garam Masala 2 Bay Leaves/Tej Patta 1/2 Cup Finely Chopped Coriander Seeds Oil As Required Salt To Taste Water As Required For Ground Masala: 1 Sliced Medium Size Onion 1 Tsp Peanuts 1 Tsp Roasted Chana Dal 2 Black Cardamom 6-7 Black Pepper 1 Inch Cinnamon Stick METHOD: FOR GROUND MASALA: 1.Turn on flame 2.Add sliced onion,peanuts,roasted chana dal,black cardamom, black pepper,cinnamom stick in a pan and roast them 3.Add 4 Tsp Desiccated Coconut in the same pan Roast it till onion becomes light brown on medium flame 4.Turn off fame and keep it aside for cooling FOR PATWADI: 5.Place a kadai on the gas Add 2 tbsp oil in it and heat it 6.Add 1/2 tsp mustard seeds,1/2 tsp cumin seeds and 1/2 tsp,sesame seeds.Roast it few seconds 7.Add finely chopped onion. Fry them on medium flame till they become light brown 8.Add 1tsp ginger-garlic paste. Saute it for a minute 9.On other side,heat 2-3 cups water in one pot 10.Add 1/2tsp turmeric powder,1tsp red chili powder,1tsp coriander powder and 1tsp garam masala and saute for few seconds 11.Add besan and salt to taste. Mix it well and roast it continuously for 2-3 minutes on low flame 12.Add 1cup warm water in besan. Mix it well as there should no lumps 13.Cover with lid and cook for 5 minuts on low flame 14.Grease 1 plate with oil 15.Now patwadi batter is ready. Turn off flame 16.Transfer the batter on the plate and spread it evenly 17.Garnish with desiccated coconut and chopped coriander leaves 18.Cut it into diamond shape and keep it aside PATWADI is ready. FOR THE GRAVY: 19.Grind the roasted masala with(2tbsp)water to a fine paste. Keep it aside 20.Turn on flame and place another kadai on it 21.Add 2-3 tbsp oil and heat it 22 1/2tsp mustard seeds,1/2tsp cumin seeds,1/2tsp sesame seeds and bay leaves and fry them for few seconds 23.Add 2 tsp ginger-garlic paste in it. Roast it for 1 minute on medium flame 24.Add ground paste. Saute and cook it for 2-3 minutes on medium flame 25.Add 1/2tsp turmeric powder,1 tsp red chili powder and 1tsp coriander powder and mix it well. Cook it well for 2 minutes on low flame 26.Add 2 cup warm water and salt to taste. Cover with lid and cook for 5-7 minutes on medium flame 27.Now Gravy is ready. Add 1 tsp garam masala and chopped corriander leaves Turn off flame FOR SERVING: Serve the Gravy in a bowl and Patwadi in a plate seperatly You can add Patwadi in the gravy Serve Patwadi Sabzi with roti,chapati and rice Serve lemon and onion slices
