Tamarind Rice Recipe - Pulihora Recipe - Gahukar's Kitchen
INGREDIENTS:
2 1/2 Cup Cooked Rice
4 Tbsp Tamarind Pulp/Imli Pulp
1 Tsp Jaggery/Gud(Optional)
1 Tbsp Peanuts
1 Tbsp Split Bengal Gram/Chana Dal
1 Tbsp Sesame Seeds/Til
1 Tsp Split Black Gram/Urad Dal
1 Tsp Cumin Seeds
1/2 Tsp Mustard Seeds
1/4 Tsp Turmeric Powder
1 Tsp Coriander Powder
1 Tsp Grated Ginger
4 Green Chilies
5 Dry Red Chilies
10-12 Curry Leaves
Finely Chopped Coriander Leaves
Salt To Taste
Oil (2 Tbsp)
METHOD:
1.Rinse 1 cup rice very well in water
Add rice and 2 cup water (depending quality of rice)in pressure cooker
Pressure cook for 3-4 whistles.Remove cooked rice in a flat plate.Allow it to cool
2.For Tamarind Paste: 50 grms tamarind dissolve in a cup warm water
for 1 hour .Discard seeds and squeeze out all the pulp
3. Turn on flame
Place frying pan and heat it
4. Add sesame seeds and roast it for a minute on medium flame
Transfer in a bowl and let it cool completely
5. Add 2 tbsp oil in the same pan and heat it
6. Add mustard seeds,cumin seeds,chana dal,peanuts and urad dal
Stirr and roast on medium flame till dal and peanuts become light golden
7.Add grated ginger,green chilies,red chilies and curry leaves
Saute for a minute on medium flame
8.Add turmeric powder and coriander powder
Saute for few seconds
9. Add tamarind pulp,jaggery and salt to taste and saute
Cook it for 10 minutes on low-medium flame
10.Grind roasted sesame seeds to a powder. Keep it aside
11.When the mixture become thick,add cooked rice
Mix it gently so that the rice grains do not break
12.Add sesame powder and chopped coriander powder. Mix it very well
13.TAMARIND RICE is ready
Turn off flame
Serve Tamarind Rice with curd,raita and papad
